Cantine Sant'Agata 2005 Pro Nobis
Using only the best grapes from a single vineyard of the
oldest ruchè vines, this is a fuller-bodied, luscious wine.
There is a minerality reminiscent of a Burgundy, mingling

Importers take the work out of choosing a bottle
Some of us choose a bottle of wine because we like the label.
Shelf talkers, those clever descriptions that dangle from the
wine shop shelves, tip the scales in many purchasing decisions.
Many of us take recommendations from our friends or sales people
when it comes to choosing a bottle of wine.
Another effective approach to choosing a bottle of wine is to
become familiar with an importer's portfolio. Many importers create
a collection of producers with a specific style in mind.
Smart importers know their audience. Finding a portfolio that
is aligned with your palate will offer you dozens of selections
that are almost guaranteed to please.
The importer is always listed on the back label.
Not all wine imported into the United States is supplied to Colorado.
Many portfolios contain domestic wine as well.
Like most states, Colorado uses a three tier system.
Someone must supply a wine to the state,
another company must distribute it to the retail outlets (or restaurant).
The public must buy a product from a retail outlet.
When redwhiteandrose.com reviews bottles of wine,
we are usually tasting them at a portfolio presentation.
Because of this, we write groups of reviews that are under the same portifolio.
Keep an eye out for the portfolio name at the end of our reviews and on
the back label of a bottle of wine.

Delightful example of how good everyday chardonnay can be.
The aromas of peaches and peach blossom fill the glass.
White Truck Chardonnay is intense on the palate with flavors of tangerine, mango, and peaches.

How wine is made
Do you scratch your head when the winemaker starts taking about skin contact,
barriques, or lees stirring? Just like any industry, the wine business has its own lingo.
Being able to appreciate the art requires that you have a grasp on the vocabulary.
The sooner a ripe grape is crushed the better.
Dom Perignon, the innovative monk that propelled Champagne into the limelight,
crushed his grapes in the vineyard as they were picked. Some producers prefer
to use the weight of the grapes to release the juice, called free run.
This is considered the best juice.
After collecting the free run juice,
a producer can elect to press the grapes to collect the remaining juice.
Pressing gently squeezes the grapes.
A producer can use free run or a press, or both.

San Lorenzo, a bright atmosphere, offering artisan Italian cuisine
My husband and I dined at San Lorenzo Ristorante, in Cherry Hills Marketplace,
recently to celebrate his birthday.
My first impression of San Lorenzo is that it is warm and inviting.
The dining room is brightly painted with plenty of yellow and red,
accented with the perfect hue of blue and green.
On the largest wall are paintings of sunflowers against a blue sky.
The décor is simple, yet special.
The second impression that I had of San Lorenzo is that someone put time into
selecting the wine list.
Nothing pedestrian, every bottle was carefully selected
and reflected the authenticity of the restaurant.
I had a glass of the La Cappuccina 2005 Soave.
We started our meal with a delicate beef carpaccio topped with shaved parmesan, arugula, and capers.
The selections of salads offered something for everyone;
I found the spinach salad with its seasoned walnuts to a perfect melody of flavors.
Being a great cook,
I find it difficult to dine out without running into disappointment.
For me, I must be impressed with the quality in order to warrant the price.
I had no problem finding value in the two entrees we ordered that evening.
San Lorenzo's squash ravioli with walnuts and sage cream sauce is heavenly.
My husband had venison with a savory dried cherry sauce with truffled mashed potatoes.
We took turns sharing each other's meals with total elation.
Unfortunately,
we did not have dessert, but when I return to this restaurant,
I will save room. The dessert menu included one of my favorite grappas, Marolo Camomile.
If their desserts are like the other items we experienced,
it would be sin to miss out on a San Lorenzo selection of confection. -BF

Great American Beer Festival, A subculture built on beer
Every year, the GABF has a different theme. Not a planned theme, like Hawaiian, or the Eighties; it's more like a commonality of 'what's new.' Two years ago, brewers were showing a lot of 'over the top with hops' beer. The new style for the 2005 GABF was the oak aged brew. There were even a few gluten-free brews last year. Usually a theme becomes a norm the next year, especially if it is well received by the revelers at the Convention Center.
It's not just the brewers that pick up on a new trend and accept it into their subculture. Pretzel necklaces, neck-strung tasting glass holders, and t-shirts with uproarious slogans are what the in-the-know people are wearing at the GABF these days. When someone drops their tasting glass a verbal wave of admonishment rises in unison from the crowd, like a secret blessing. The crowd is gregarious, scruffy, and always entertaining, sharing a passion for beer that seems to connect them together like a nationality. If the people watching isn't enough there will be live music, cooking with beer demonstrations, and book signings.

Palmaz Wine Dinner at
Chimney Bistro
Florencia Palmaz and Chef Florian Wehrli
will be hosting the dinner and introducing
Palmaz Cabernet Sauvignon and Palmaz Chardonnay,
available for the first time to Colorado wine lovers.
The other two wines presented that night are only available for special guests at the winery.
The Palmazes bought a forgotten stone winery
and the acres of land that had once produced fine Napa Valley, Cedar Knoll Winery wines.
Cedar Knoll was founded in 1881 by Henry Hagen, one of Napa Valley's pioneer
winemakers. The vineyards survived the Wine Country’s phylloxera infestation in
the 1890s, but Prohibition was fatal. The winery fell into disrepair and the
vineyards lay fallow for nearly eighty years. Today, the vineyards are burgeoning,
the restored Hagen house is a family home again, and the winery has been resurrected.
Palmaz Vineyards' winemaking and
aging takes place within the living rock of
Mount George, in a flawlessly engineered maze of tunnels and lofty domes.
The depth of the wine cave is equivalent to an 18-story building,
providing the vertical range needed for true gravity-flow winemaking.
Thus, the wine is never subjected to the violent agitation of pumping,
which can change the wine’s intra-molecular structure. This gentle treatment
allows the finest nuances of flavor to develop naturally – the result is a
complex, elegant wine.
