We tried this wine with and without food and found it to be
exceptional with food.
Without food, this wine should be laid down for a few years.
The wine is enhanced by the food
and the flavor of the food is improved by the wine.
With food, it offers flavors of violets, dried rose petals,
cedar, sour cherry, and tar.
The mid-palate tastes of tobacco, giving the red
a very autumnal like essence.
If you are not familiar with Italian wine and food,
you should treat yourself to this wine with a nice
steak or Alfredo sauce.
The prominent tannins are polished off by fat,
creating a floral, elegant experience.

Shopping for Washington State Wine
Washington State is the United State's second largest growing area. It is at the same latitude as Bordeaux and Burgundy. It has an average of two more hours of daylight than most growing regions in California. Although Washington has abundant sunshine, its cool nights allow for slow ripening, imperative for the grapes to retain their acidity.
Washington State whites are refreshing, exciting, and polished. Look for riesling, Müller Thurgau, chardonnay, pinot blanc, pinot gris, sauvignon blanc, and chenin blanc. Explore Washington State bubbly too. Sparkling wines introduce the evening with pre-dinner mingling. They also go well with appetizers and can incite the palate.
Look for Bordeaux blends. Cabernet sauvignon, merlot, and cabernet franc are three Bordeaux grapes found in Washington red blends. Syrah is the fastest growing category in Washington for good reason; syrah grown in this region is sultry and dense, like it came from the Northern Rhone Valley.
While Washington State can claim the same latitude as Bordeaux and Burgundy, its growers boast better weather than the legendary French regions. Washington State has a style that is characteristically French, yet offers ripe fruit flavors in a new world fashion.
Most of Washington's wine grapes are grown east of the Cascade Mountains. This area is very arid. When grapes struggle for moisture they produce better fruit. Controlled run off from the Cascade Mountains enables Washington grape growers the ability to grow better quality grapes.
Some of Washington State's American Viticultural Areas (AVAs) are Yakima Valley, Columbia Valley, Walla Walla Valley, Puget Sound, Red Mountain and Columbia Gorge. Exploring these AVAs can be an interesting adventure in all price ranges and as time unravels, these regions will continue to improve and find their identity in our market. For now, many of these wines are undiscovered gems.

aeration:
is contact with air.
Like breathing, aeration can happen by just opening
the bottle, decanting, or pouring in a glass and
allowing the wine to come in contact with air.
A wine's flavor can bloom with aeration,
but contact with oxygen will eventually cause its
flavors to decline until it is oxidized.
balance:
is a representation of all of the
components of wine, ripeness, sugar, acidity,
finish, tannin, and alcohol. To be balanced
these components should be in harmony.
Every region, blend, and wine grape variety
has a typical style and being balanced means
those expectations are met.
A wine can be out of balance and then aging can
allow the wine to be balanced with time.
A balanced wine offers components that do not overwhelm each other
and are in accordance is with the norm,
as well as what the palate desires.
bottle stink:
a smell that is not appealing to the olfactory.
When first opened, some bottles of wine
emit an odor that is not pleasing.
These odors often blow off leaving a very palatable wine.
brix:
is a measure of sugar content in a grape or grape juice.
Measuring the brix give an indication as to how
much alcohol a wine will contain after fermentation.
Brix is a measurement used to determine when grapes
should be picked.
